Hi Donna,

Thank you for your question and for sharing the picture.

The main purpose of an otoshibuta is to help the cooking liquid circulate evenly so that the flavors are absorbed uniformly, even with a small amount of broth. It also lightly presses down the ingredients to prevent them from breaking apart or colliding with each other while simmering.

In that sense, almost any tool that fulfills these roles can serve as an alternative. From the photo, your collapsible stainless steel steamer basket looks like a very creative and effective substitute! It should work quite well!
