Hi Pamela,

Thank you so much for your kind words and for sharing these wonderful resources! I love that you have go-to artisan Japanese soy sauce!

That specialty soy sauce sampler is a fantastic find! I’ve been experimenting by ordering one brand at a time in bulk before moving on to another in my quest to find my absolute go-to.
I’m happy that you enjoy my take on dishes. Your encouragement means a lot, and I hope you’ll enjoy trying them! 🙂

Yuto

My favorite and daily soy sauce, especially tasty with sashimi and grilled fish is Hakuō/白王 – a light soy sauce type made by Koshi no Murasaki/越のむらさき in Niigata: https://www.koshi-no-murasaki.co.jp

Here in Japan – in Japanese and English, there is a site which sells 100mL bottles of many traditional and artisan soy sauces to try and compare: https://store.s-shoyu.com/en

I really enjoy your original take on Japanese dishes. They are innovative and a lot of fun. And I intend to try many of them out.
