I’ve made your eel kabayaki which is wonderful, I’m sure this will be just as good. My vegan son claims he hates eggplant but this might be a great recipe to make him change his mind, silly boy.

Hi Trish,

Thank you for your question about making this recipe without a microwave!
You can substitute the microwave method by steaming the eggplant instead. You can place the eggplant in a steamer basket over boiling water and steam for 6-7 minutes on high heat. This will achieve the same tenderness as the microwave method would.
