I couldn’t read the packaging of the soy milk at the supermarket, no glasses, it has fructose so I added a little salt. The noodles and the pork belly were both from your recipes too. Some blanched bok choy (from the garden), ramen egg made in the left over pork marinade, ginger, saindoux (french for lard), green onion and ground sesame, it was a pretty nice meal which has gone onto the repeat list by request.

This cheat’s tonkotsu recipe is brilliant! I used your recipe and added a teaspoon of NoodleBomb ramen sauce towards the end for an extra umami punch without increasing salt. Thank you for your question! Lard really gives that tonkotsu-like porky flavor, so that’s the ideal. But if it’s tough to get, you can try a smaller amount of unsalted butter or sesame oil instead. Just keep in mind the flavor will shift a bit! I hope this helps!
